Southern Beans and Rice with Shrimp and Seafood

Everything you need to make this delightful and warming dish.

One cup of rice (uncooked)

One cup of dried read beans that have soaked over night to soften

One small onion chopped very fine

A Half a cup of sliced Okra. HINT: When Okra is cooked like this it will not come out slimy and adds that southern taste.

Cajun Spices to taste

One dozen med raw shrimp peeled

Two small pieces of any type of fish

Immatation crab meat or real crab meat.

One can of chopped clams 

3 cups of water

Salt and pepper

OR

One box of Zatereni New Orleans style Rice and Beans. If using the box, add onion and seafood. It's not to spicy so I usually add a little more cajun spices to beef it up.

In a 2 qt pot put everything in and let it come to a boil. Leave the seafood out until the rice and beans has fluffed up, about 15 minutes. Then drop all of it in and turn the heat down to simmer for an hour. Take care to stir it every five minutes or so. I use a wooden spood because it does stick to the bottom.

To make this on the top of the woodstove, it's the same time but it may take a few more minutes and the pot must be on a trivit.

This dish is like a watery stew on the first meal but left overs will get thick when you put it in the fridge. To get it back to soupy just add more water when you reheat it.

You can also replace all of the seafood with left over chicken or ground beef. 

It's an excellent dish for those cold winter nights. Warms the body and the soul. Enjoy
